Hemp Protein Veggie Bread

This bread is perfect for meal prep – made from whole grains, high in protein and healthy fats and you can have it savory or sweet! You can enjoy the bread any time of the day: pair it with your favorite nut butter or toppings to make a nutritious breakfast; add to your nourish bowl as a healthy source of carbs and protein, or even have it as an afternoon or post-workout snack!

Ingredients:

  • Chia egg:

1/4 cup chia seeds

1/4 cup warm water

  • Dry:

1 cup chickpea flour

1/4 cup + 1 tbsp unflavored Royal Hemp protein 

2 tbsp Royal Hemp Hemp Seeds 

3/4 cup rolled oats

1 cup grated carrot or any veggies of choice e.g. zucchini, baby spinach

1 tsp salt

1 tsp baking soda

  • Wet:

1 cup water

1.5 tsp Apple cider vinegar

 

Method:

  1. Preheat oven to 170 C. Prepare the chia egg by mixing together chia seeds & water together and let soak until a thick gel is formed.
  2. In another bowl mix together all the dry ingredients together. Then add in the chia egg and all the wet ingredients. Mix well. If the batter is too wet add more protein powder or flour.
  3. Pour batter into a lined baking loaf tin and top with nuts/seeds of choice (I added more pumpkin seeds).
  4. Bake for 25 mins. IMPORTANT: Flip the bread upside down and bake for another 25 mins. Bread is done when it sounds hollow when tapped. Let cool completely before slicing (difficult, but important:)
