Protein Pancakes by Taren Baxter

This time around Taren has spoiled us with some super fluffy protein pancakes with all the trimmings.

These pancakes are deliciously tasty, healthy and filling all at the same time. With over 22g of protein per serving this breakfast will be sure to keep you energised for whatever your day will bring. Like all of her recipes, it is simple to make and your prep time will stay under 10 minutes.

This recipe will make either one large pancake to share or 2 individual serves. The pancake mix will last in the fridge for up to 3 days.



For pancake-
  • ½ cup wholemeal Self Raising flour
  • A ¾ scoop of Royal Hemp protein powder (i used choc hazelnut, click here to buy)
  • 1tbs cacao powder
  • 1tsp sweetener of choice (optional)
  • 1tbs Royal Hemp Organic Hemp Seed Oil (Click here to buy)
  • 2 egg whites
  • 145ml milk of choice (Taren used unsweetened almond milk)
For Blueberry Chia Jam-
  • ½ cup blueberries
  • 1tbs Chia seeds
For protein yoghurt-
  • ¼ cup sugar-free yoghurt ( Taren used low fat natural greek yoghurt)
  • ¼ scoop Royal Hemp Protein Powder (again Taren used choc hazelnut, click here to buy)


For Pancake:
  1. In a bowl mix all dry ingredients then slowly mix in all wet ingredients excluding the egg whites.
  2. Whisk egg whites until soft peaks form
  3. Slowly fold in egg whites
  4. Heat up a non-stick pan and pour in mixture
  5. Cook until small bubbles form in pancake
  6. Flip pancake over for approx 30-60 seconds or until pancake is cooked through
  7. Serve straight away
For blueberry Chia Jam:
  1. Place blueberries in a saucepan over medium heat and mash approx half of the blueberries
  2. Add chia seeds and stir
  3. Lower heat and let simmer for 5 minutes
  4. Serve hot on top of the pancake
For Protein Yoghurt: 
  1. Combine yoghurt and protein
  2. Serve cold with blueberry jam and pancake
